Black Apricot with Lemon Juice

Fruity drinks are sweet and refreshing; especially during the hot summer season.Previous day I tried apricot - lemon juice. It is really healthy, tasty and easy to make.

Apricots are so versatile that they can be eaten raw or cooked, dried, canned, or frozen,and can make fresh  juice also. Apricots are excellent sources of nutrients such as Carotenes and vitamin-A , that  promote good vision. It also contains vitamin-C, another natural anti-oxidant. Vitamin-C helps body develop resistance against infectious agents and scavenge harmful oxygen free radicals. Also contains riboflavin (B2) and niacin (B3).Apricots are a good source of fiber, which has a wealth of benefits including preventing constipation and digestive conditions such as diverticulosis.Apricots are  also an excellent source of minerals such as potassium, iron, zinc, calcium,  manganese, traces of sodium, cobalt and bromine. Potassium is a heart-healthy mineral; an important component of cell and body fluids that help regulate heart rate and blood pressure.

Caution:

Fresh apricots contain a small amount of oxalates.  people with a history of calcium oxalate-containing kidney stones should not consume too much of this fruit.

INGREDIENTS:

  • Fresh apricots, peeled,  pitted and sliced – 6 nos
  • Lemon Juice – 2 Tbsp
  • Sugar /Honey – 3 Tbsp
  • Water – 3 cupsblack apricot juice (3)METHOD:
  • Wash the apricots well. Peel and chop them.
  • Place all ingredients in a blender /juicer and blend well for 30 seconds.
  • Chill in refrigerator or Pour into glasses and enjoy.

Serving  Method:

  • Take a burger bun.burger bun and patties (2)
  • You can cut the burger bun into two.

  • Layer one half of the bun with lettuce or cabbage leaf or spinach.burger bun and patties (12)
  • Top it with Sliced Onion burger bun and patties (13)
  • Place Vegetable Patty On to of that onionburger bun and patties (14)
  • Now place sliced Tomatoburger bun and patties (15)
  • If you want you can add sliced onion and spinach leaves on top sliced tomato

  • If you like, you can add sliced Cucumber, cabbage leaves and Cheese. Then cover it with the other half of the bun.

Rava Appam/Semolina Appam

INGREDIENTS:

  • Rava/Semolina  – 1/2 cup
  • All purpose flour/Maida – 1/4 cup
  • Rice Flour – 1/2 cup
  • Water – 3 cups
  • Red chilly powder – 1/2 tsp
  • Ginger, chopped – 1” piece
  • Cashew nuts – 10 nos
  • Cumin Powder/Jeera powder – 1/4 tsp
  • Asafoetida – 1/4 tsp
  • Onion, chopped – 1/4 cup
  • Salt – To taste
  • Ghee/Butter /Oil –  1 tspDSC07025
  • METHOD:

  • Place Rava/Semolina, All purpose flour/Maida and Rice flour in a large mixing bowl and mix well.
  • To this pour 2 cups of water and mix well.
  • Now add Red chilly powder, chopped ginger, cashew nuts, Cumin Powder/Jeera powder, Asafoetida, chopped onion, salt to the flour mix and mix well. Keep it aside for 30 minutes.
  • After 30 minutes or an hour, pour this mixture to big jar of your mixi/blender and grind well. If you need, add enough water to get right consistency, The batter should be  lighter than idli batter.Neither too loose nor thick batter.
  • Pour the batter to a large  bowl.
  • Stir it well, so that some air bubbles form in the batter.
  • Let the batter rest for half an hour.
  • Before preparing the appam, stir the batter once again well.
  • Heat an appam kadhai or a deep non-stick tava and grease it lightly with Oil /butter/Ghee.
  • Pour a ladleful of the batter into the  Appam Kadai and slowly rotate the kadhai in a circular motion so that a thin layer forms on the sides while the middle remains thick.
  • Close the kadai with a tight lid and cook on medium heat.  Cook it for a minute.
  • Appam will start forming holes on the top surface and get cooked in the steam.
  • Once the Rava Appam/Semolina Appam is fully cooked ( the middle fluffy part is cooked), take the appam out of the pan and transfer to a serving plate.
  • Continue making more appam in the similar way with rest of the batter.
  • Warm Rava Appam/Semolina Appam goes very well with all  hot or sweet curries.DSC07028

    Vegetable Patties with leafy Vegetables

    Vegetable Patties  (5)This Weekend I prepared Burger buns and Vegetable Patties for my loving husband. The vegetable patties are easy to make . It is healthy and delicious also.Both kids and adults like to eat this as a snack or as a starter.

    INGREDIENTS:

  • Potatoes, peeled and cubed – 2 nos
  • Onion, chopped -  1 no
  • Green Peas – 1/2 cup
  • Cabbage, chopped – 1/2 cup  
  • Carrot, peeled and cubed – 2 no
  • Broccoli  – 10 nos
  • Ginger – 2” piece, minced ( or ginger powder)
  • Garlic – 2 pods, minced ( or garlic paste)
  • All purpose flour – 1/2 cup
  • Baking powder – 1/2 tsp
  • Bread crumbs – 1/2 cup
  • Turmeric powder – 1/4 tsp
  • Meat masala – 1 tsp
  • Red chilly powder – 1/2 tsp
  • Black Pepper powder – 1/2 tsp
  • Garam masala – 1/2 tsp
  • Coriander leaves, chopped – 3 Tbsp
  • Salt – to taste
  • Butter/Oil– 3 TbspVegetable Patties  (1)METHOD::
  • Cut the potatoes and carrots into small cubes.
  • Cook the cubed potatoes, carrots, green peas,and  broccoli well by adding  enough water , 1/4 tsp turmeric powder and salt. If you want, you can pressure cook them.
  • When it is well cooked, drain excess water then transfer to a large bowl and mix them well.
  • To this add chopped onion, chopped cabbage leaves, red chilly powder, Ginger powder, garlic paste, Garam masala , Black pepper powder, Meat masala and Coriander leaves and mix well. Check for the salt.
  • Now mix all purpose flour  and baking powder to the vegetables mixture.
  • Take a hand full of vegetable  mix and make a lemon sized ball.
  • Now flatten it with the center of your palm. (do not make it too thin, it has to be at least ½ inch thick) 
  • Gently flatten each ball after you’re done rolling it.
  • Cover the flattened patties  with the breadcrumbs, on both sides. Vegetable Patties  (3)
  • After making all the patties place them in refrigerate for about 30 minutes.
  • Heat 1 tsp of oil or butter in a flat pan / tawa ans spread it well.
  • On a medium low heat, place 1 or 2  patties in the pan, let them fry till you can see golden crust on the bottom.
  • Now flip the patty gently to the other side, add some more oil/ butter and let it fry  till get a golden crust on that side also.
  • Do the same procedure with the remaining dough.
  • If your pan is big enough you can fry 3 more patties at the same time.
  • Serve Hot with Coriander chutney or Tomato ketchup.
  • If you like you can sandwich these vegetable patties in burger buns or bread.burger buns (35)[7]NOTE:
  • To Deep fry:

  • When the vegetable patties are ready to cook,  oil 1 cup of oil in large frying pan over medium heat.
  • Cook the vegetable patties for about 3-4 minutes on each side, or until golden brown.
  • Serve hot with Coriander chutney or Tomato ketchup. Vegetable Patties  (4)

    Burger Buns

    • All purpose flour/Maida – 4 cup
    • Warm milk – 1/2 cup
    • Warm water – 1 cup
    • Instant yeast – 2 tsp
    • Sugar – 3 tbsp
    • Salt – 1 tsp
    • Large egg – 1
    • Unsalted Butter, melted – 1/2 cup
    • Extra all-purpose flour – 1/2 for dusting
      For topping:
    • 1 large egg beaten with 1 tbsp. water or milk , for egg wash
    • sesame seeds – 2 tsp
      METHOD:
    • In a bowl add yeast with 2 Tbsp of  warm water, mix well and keep it aside.
    • Take a large mixing bowl and add egg, sugar, salt, melted butter and blend well using a hand mixer  in slow speed  for 2 minutes.
    • Add 2 cups of  flour to the bowl, and mix until incorporated. Pour yeast water mix to this and mix well.
    • blend well using a hand mixer by adding warm milk and enough  water about 5 minutes. 
    • Stir in enough flour to form a soft dough, and continue to add flour and knead until a smooth, elastic dough forms that will take round 10-15 minutes. Sometimes  the dough will be somewhat tacky, but you have  to avoid adding too much extra flour which will  create tough buns.burger buns (2)
    • Transfer the dough to a lightly oiled bowl.  Cover with plastic wrap or Cover it with a tea towel and let it rise in a warm place until doubled in bulk, 1-2 hours.

    • Preheat your oven to 350 degree F.
    • After 1 or 2 hours, Punch the dough down to the bowl to remove the air.

    • Dust some flour in your work surface and place the dough on top and roll it into a long strip.burger buns (9)burger buns (10)burger buns (11)
    • Line a baking sheet with parchment paper or a silicone baking mat.
    • Using a dough scraper, or knife divide the dough into 8 or 10  equal parts.For easiness you can divide the whole dough into two parts. and then divide each parts into 4 or 5.

    • Gently roll each portion of dough into a ball and place on the baking sheet, 2-3 inches apart.  burger buns (16)
    • Cover it with a loosely with plastic wrap or tea towel and let rise again, 1 hour, until puffed up and nearly doubled.
    • Brush the top of each  buns lightly with the egg wash and sprinkle with sesame seeds.  burger buns (20)
    • Bake the buns about 15 minutes rotating halfway through baking, until the tops are golden brown. burger buns (21)
    • Once buns have turned golden brown color transfer it to a rack to cool completely.
    • You can have burger buns any time.burger buns (25)TIPS:
    • Besides rolling the buns into balls, you can flatten it.  Gently deflate the dough, and form it into a smooth 8" log. Slice the log as though you were slicing cinnamon buns. Gently pull each slice into a circle.
    • Brushing buns with melted butter will give them a soft, light golden crust. Brushing with an egg-white wash will give them a shinier, darker crust. For seeded buns, brush with the egg wash; it'll make the seeds adhere. And you can add the extra yolk to the dough, reserving the white for the wash.
    • For best results or to get a smooth, slightly soft dough, use smaller amount of water in summer or in a humid environment, the greater amount in winter or in a dry climate; and something in between the rest of the time.
    • For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big.

    SERVING METHODS:

    • You can serve with tea or coffee.
    • Another way is ::
